Description

A comforting dish of sweet onions caramelized under a blanket of cheeses and herbs, perfect for weeknight dinners.


Ingredients

  • 4 large sweet onions, peeled and cut into 1/4-inch slices
  • 4 tablespoons unsalted butter, melted
  • 1 cup shredded cheddar cheese
  • 4 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon chopped fresh rosemary
  • 1/2 teaspoon fine salt
  • A few grinds of black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the sweet onions and layer them in a baking dish.
  3. In a bowl, mix the melted butter with the cheeses and seasonings.
  4. Pour the cheese mixture over the onions.
  5. Bake in the oven for 30-40 minutes or until the onions are golden and bubbly.
  6. Serve warm as a side dish.

Notes

If you do not have fresh herbs, 1/4 teaspoon dried thyme works in a pinch. Do not skip the cream cheese; it gives the sauce a silky texture. Frozen onions work when time is tight but may lose some texture.
