Description

Quick and easy cucumber roll ups filled with creamy chicken salad, perfect for light lunches or snacks.


Ingredients

  • 1 large cucumber
  • 1 cup cooked chicken, shredded
  • 1/4 cup Greek yogurt or mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish

Instructions

  1. Slice the cucumber into long, thin strips using a vegetable peeler or mandoline.
  2. In a bowl, combine the shredded chicken, Greek yogurt or mayonnaise, Dijon mustard, diced celery, and red onion. Mix until well combined. Season with salt and pepper.
  3. Spread a layer of the chicken salad mixture onto each cucumber slice.
  4. Roll the cucumber slices up tightly and secure with a toothpick if necessary.
  5. Garnish with fresh dill or parsley. Serve cold.

Notes

You can use rotisserie chicken for quick prep. For a vegetarian option, swap shredded chicken for mashed chickpeas. Keeps well in the fridge for 48 hours.
