- 1 cup cooked chicken, shredded
- 1/4 cup Greek yogurt or mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup diced celery
- 1/4 cup diced red onion

- Fresh dill or parsley for garnish
Instructions
- Slice the cucumber into long, thin strips using a vegetable peeler or mandoline.
- In a bowl, combine the shredded chicken, Greek yogurt or mayonnaise, Dijon mustard, diced celery, and red onion. Mix until well combined. Season with salt and pepper.
- Spread a layer of the chicken salad mixture onto each cucumber slice.
- Roll the cucumber slices up tightly and secure with a toothpick if necessary.
- Garnish with fresh dill or parsley. Serve cold.
Notes
You can use rotisserie chicken for quick prep. For a vegetarian option, swap shredded chicken for mashed chickpeas. Keeps well in the fridge for 48 hours.
