Description

A creamy and comforting strawberry cheesecake chia seed pudding that’s easy to prepare and perfect for breakfast or dessert.


Ingredients

  • 1 cup almond milk
  • 1/4 cup chia seeds
  • 1/4 cup vegan cream cheese
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1/2 teaspoon lemon juice

Instructions

  1. In a bowl, whisk together almond milk, chia seeds, vegan cream cheese, maple syrup, and vanilla extract until well combined.
  2. Stir in the lemon juice and chopped strawberries, folding in the fruit gently.
  3. Cover and refrigerate for at least 4 hours or overnight until the mixture thickens.
  4. Serve chilled, topped with additional strawberries if desired.

Notes

For a richer base, substitute coconut milk. You can also use Greek yogurt instead of cream cheese.
