Description

A simple and refreshing salad combining crisp cucumbers, fresh mozzarella, and cherry tomatoes with a drizzle of olive oil and balsamic vinegar.


Ingredients

  • 2 Cucumbers
  • 8 oz Fresh mozzarella cheese
  • 1 cup Cherry tomatoes
  • 1/2 cup Fresh basil leaves
  • 2 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Slice the cucumbers and cherry tomatoes.
  2. In a large bowl, combine the cucumbers, mozzarella, and tomatoes.
  3. Tear the basil leaves and add them to the bowl.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Season with salt and pepper to taste.
  6. Toss gently to combine and serve immediately.

Notes

For added texture, toss in toasted pine nuts. For a creamy variation, consider using Greek yogurt.
