Description

A comforting and flexible recipe featuring crispy potato baskets filled with eggs, perfect for any meal.


Ingredients

Scale
  • 4 medium potatoes
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 4 large eggs
  • Shredded cheese (optional)
  • Chopped green onions (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grate the potatoes and rinse them in cold water to remove excess starch.
  3. Pat the grated potatoes dry with a towel.
  4. In a bowl, mix the potatoes with olive oil, salt, and pepper.
  5. Grease a muffin tin and press the potato mixture into the bottom and up the sides of each cup to form a basket shape.
  6. Bake for 25-30 minutes until golden and crispy.
  7. Remove from the oven and carefully crack an egg into each basket.
  8. Return to the oven and bake for an additional 10-12 minutes, or until the eggs are set to your liking.
  9. If desired, sprinkle cheese and green onions on top before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat in the oven for best results.
