A cozy breakfast option that combines creamy oats with a tangy cheesecake flavor and a sweet blueberry jam, perfect for meal prep.

- 2 cups rolled oats (gluten-free)
- 2 cups coconut milk (full fat, canned)
- 1/2 cup cream cheese (softened, vegan or dairy)
- 1/2 cup unsweetened plain yogurt (vegan or dairy)
- 2 tbsp chia seeds
- 1 tbsp lemon juice
- 1 tbsp maple syrup
- 1 tbsp vanilla
- 1/2 tsp salt
- 2 cups frozen blueberries
- 1 tbsp chia seeds

Instructions
- In a large mixing bowl, combine all the ingredients for the cheesecake oats. Stir until well combined.
- In a separate microwave-safe bowl, combine the frozen blueberries, lemon juice, and maple syrup. Microwave for 2 minutes, stirring at the halfway mark. Mash the berries to create a smooth consistency.
- Cover both the oat mixture and berry mixture and refrigerate overnight, or for at least 2-3 hours.
- Once set, mix the mixtures, adding more coconut milk if needed. Adjust sweetness or lemon brightness.
- Layer the blueberry jam and overnight oats in a bowl, cup, or mason jar.
- Top with fresh berries, graham crackers, granola, or a drizzle of maple syrup as desired.
Notes
Store in the fridge for up to 4 days. Freezing the jam extends its shelf life to 2 months.
