Description
This crispy parmesan chicken features a rich garlic sauce, making for a quick and comforting weeknight dinner.
Ingredients

- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup parmesan cheese, grated
- 1 cup spinach, chopped (optional)
Instructions
- Season chicken with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat.
- Sear the chicken until it develops a golden crust, about 5-6 minutes per side. Remove and set aside.
- Lower the heat and add minced garlic to the pan; sauté for about 30 seconds.
- Pour in the cream, stirring continuously, and bring to a low simmer.
- Stir in Italian seasoning and parmesan; season with salt and pepper.
- Add chopped spinach if using, and simmer for 2-3 minutes.
- Return the cooked chicken to the pan, spooning sauce over it. Simmer for 1 minute.
- Serve hot with your choice of sides.
Notes
For extra flavor, serve over buttered egg noodles or roasted vegetables. The sauce can be thinned with a splash of water or broth if it gets too thick.
