Description

This crispy parmesan chicken features a rich garlic sauce, making for a quick and comforting weeknight dinner.


Ingredients

Scale
  • 4 small to medium chicken breasts (or 2 large halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 34 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup parmesan cheese, grated
  • 1 cup spinach, chopped (optional)

Instructions

  1. Season chicken with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear the chicken until it develops a golden crust, about 5-6 minutes per side. Remove and set aside.
  4. Lower the heat and add minced garlic to the pan; sauté for about 30 seconds.
  5. Pour in the cream, stirring continuously, and bring to a low simmer.
  6. Stir in Italian seasoning and parmesan; season with salt and pepper.
  7. Add chopped spinach if using, and simmer for 2-3 minutes.
  8. Return the cooked chicken to the pan, spooning sauce over it. Simmer for 1 minute.
  9. Serve hot with your choice of sides.

Notes

For extra flavor, serve over buttered egg noodles or roasted vegetables. The sauce can be thinned with a splash of water or broth if it gets too thick.
