Instructions
- Whisk together the almond milk, brewed coffee, maple syrup, vanilla extract, and cinnamon in a medium-sized bowl until well combined.
- Stir in the chia seeds and whisk for a minute to prevent clumping.
- Cover the bowl and place it in the refrigerator for at least 2 hours or overnight until it thickens into a pudding-like consistency.
- When ready to serve, give the mixture a quick stir, then spoon it into glasses or jars.
- Garnish with a dollop of yogurt, chocolate shavings, or cacao nibs, and enjoy chilled.
Notes
Store covered in the fridge for up to four days. Stir a splash of milk to restore creaminess if it thickens too much.
