Description

A quick, refreshing salad that captures the flavors of a California roll without the fuss of rolling. Perfect for busy weeknights.


Ingredients

Scale
  • 2 cups English Cucumbers, sliced
  • 8 oz Imitation Crab or Crab Meat (or cooked shrimp/tofu)
  • 1 medium Avocado, cubed
  • 2 tbsp Mayonnaise
  • 2 oz Cream Cheese
  • 2 tbsp Soy Sauce
  • 1 tbsp Sesame Seeds (optional)

Instructions

  1. Slice the cucumbers into thin half-moons or small dice and place in a bowl; sprinkle lightly with salt and let sit.
  2. Break up the crab into bite-sized pieces.
  3. Soften the cream cheese by mashing it in a bowl, then mix in the mayonnaise.
  4. Add soy sauce to the cream cheese mixture and stir until creamy; adjust for saltiness.
  5. Combine the crab and cucumbers in a bowl and toss gently.
  6. Fold in the dressing until everything is lightly coated.
  7. Cube the avocado and gently fold it in just before serving.
  8. Finish with sesame seeds and a drizzle of sesame oil, if desired.

Notes

Store in an airtight container in the fridge for up to two days. Keep the avocado separate if storing longer to prevent browning.
